Freya | 85+ year old Italian sourdough starter

Freya is a sourdough starter that came to me from Messina, which is in Sicily, Italy, that I have dehydrated after she hit her peak activity.

You will receive 10g of dehydrated starter, which is enough for two batches. You will be using only 5g to start the rehydration process, so you can set the remainder aside (I have found the freezer is best for long term storage). It will take between a total of 5-7 days to be ready to use. Be patient throughout the process, watching her come alive once again so you can enjoy the fruits of your labor and those who came before us. Once you rehydrate and reach peak activity, it can be used in a variety of recipes like breads, pancakes, muffins, cookies, etc. The possibilities are endless!

The starter comes with instructions and optionally, you may purchase a wooden stirrer that I hand carved from rainbow poplar wood (poplar wood is the only wood that does not contain terpene hydrocarbons nor emit toxic phenols making it food safe), which are at a limited availability for the time being. I find the shape to be perfect for scraping down the sides of the jar. I personally use and prefer Weck jars, and have some available for add-on as well.
