
My proprietary herbal spin on traditional cajeta- which is a favorite treat in our home. Cajeta is a deliciously rich vanilla and spice blend-soaked-caramel made from holistically raised (local to me) goats milk cooked down and simmered for over an hour into a thick, luscious syrup. What makes rooted + wild.’s cajeta different is that its infused with nettles and chaga, for their amazing benefits and coconut sugar is used rather than white sugar.
Enjoy this in coffee, over pancakes, in crepes, on ice cream, by the spoon…. There’s really no wrong way to enjoy it. A fun thing the kids like to do is put a little dollop on parchment paper with a wooden pop stick, placed in the freezer until hardened, and you have yourself a delicious lollipop.
Shelf life- 3 months unopened if kept out of sunlight and away from heat. We keep ours on the shelf in the pantry. Once opened, must be refrigerated. Keeps for about a month (though it never lasts that long in my home)
A little history:
Cajeta [kah-HEHY-tah] The origins of cajeta date back to 19th century Celaya, a Mexican city in the state of Guanajuato, where the Mexican War of Independence began. As Mexican troops fought to free themselves from Spanish rule, cajeta became a popular soldiers’ ration not only due to its flavor, but also because it lasted longer than other foods.
